When Britain went out for a Mexican, it used to conjure up images of cheap tequila shots, mind-numbing spices, and greasy tortilla chips. Wahaca shook things up and began doing things a little differently. When the store's owner was 18, she first visited Mexico and fell in love with it. Having the opportunity to sample the exquisite flavors concocted by the most dedicated street food vendors sprouted a seed that grew and blossomed. Years later, she returned to Mexico City and devised a strategy for demonstrating to people in the United Kingdom how colorful and delicious Mexican food might be. Her goal came true in 2007, when business partner Mark and she opened the first Wahaca in Covent Garden, London, after a quick spin through the MasterChef kitchens.
